If you suspect that this is another round of tomatoes and basil and olive oil and garlic and mozzerella, you are 100% correct. I'm starting to think there is no wrong way to make these ingredients into food.
Tonight's effort (I have a lot of tomatoes and basil to work off, is why. Also, I adore fresh tomatoes. I love them LOTS. I love them so much that I don't eat tomatoes in the winter because it only depresses me.) was a salad of tomatoes and chopped basil and cubed mozzerella dressed with salt, pepper, and garlicky olive oil with garlic hunks still in it. It was fanfuckingtastic. I slurped up the leftover sauce when all the food part was gone. It was that good. I just finished eating it and I want there to be more of it. I would eat it to the point of being sick.
Directions:
Small amount of olive oil in a pan. Add about four small sliced cloves of garlic. Cook until garlic is just starting to goldenbrown.
In big bowl, slice up into hunks two medium tomatoes. Add a huge handful of chopped up fresh basil. Add some hunks of mozzerella. (Feta would probably also work but we've covered my deficiencies in the cheese department already.)
When oil and garlic part is done, pour it over the tomatoes and basil. Stir. Salt and pepper to taste. Eat up.
Y'know, really great bread to go with would have helped this but it was seriously tasty all on its own.
