Aug. 15th, 2008 06:50 pmFantastic dinner tonight. Almost too fantastic, really. I like spicy food and sometimes I overdo the spicy to just about where I can't eat it. The upside is that if I can manage to eat the food, it's really delightful. The downside is that my lips and tongue burn while I'm shoveling in the delight.
First, make yellow cabbage with jalapenos. I've allowed as how this was "dinner" before but apparently I didn't give you folks much of a recipe. My bad.
Quarter of a head of cabbage, sliced into thin ribbons. (Cut the core out so that the pieces don't stick together.) Add two, three jalapeno peppers, chopped up pretty small. I don't seed them. Cook these in a nice cast-iron pan with a small dollop of lard over low heat, stirring until wilty and mostly browned. Salt a bit while you're at it.
When the cabbage is done, add a pat of butter and about half a teaspoon of turmeric, then stir until everything is yellow.
Then, serve the yellow cabbage with jalapenos with
(a) plain white rice
(b) cucumber salad with cilantro, yogurt, and garam masala (Take a cucumber. Slice long way into quarters. Cut out seedy bit with a spoon, slurp up or discard as your preference. Add a handful of chopped fresh cilantro and a couple of glops of yogurt to make it all bind. Put in a small amount, 1/4 teasp or so, of garam masala. Stir until mixed.)
Tastylicious, for sure.
