I really like yellow cabbage with peppers. It's a good dinner.
Ingredients:
1/4 head of cabbage, sliced into really thin ribbons
2 or 3 hot peppers: jalapeno, long green hot, whatever you can get, sliced into rounds
handful fresh cilantro, chopped
turmeric, one or two teaspoons
salt
tablespoon lard
tablespoon butter
Take a large cast-iron frying pan. Heat to medium. Melt lard in it. (Butter is FOR LATER. I did not forget it.) Throw in cabbage ribbons, salt well. (Not kidding about the salt, either.) Add pepper rounds, too. Fry at low-medium until some of the cabbage is browned and ALL of it is very, very wilty. This is not a crunchy dish. Do a sort of lift-n-stir motion to maximize browning of cabbage because that kind tastes better. Once cabbage is mostly done, cut the heat way back and cook a little longer as your cast iron cools off. When you think it's cooled down some, add the butter and let it melt. Then, add the turmeric and fresh cilantro. Stir until there is no more powder visible from the turmeric.
Eat. Yogurt or cottage cheese makes a nice side to this, the cool and creamy contrasting well with the hot and spicy.
