Aged gouda festive with pilsner (do not have) or cornichons (which I think are maybe pickles?) or whole-grain mustard WHICH I HAVE. So I'm eating it with whole-grain mustard. It's a good pairing. It's a damn fine cheese. I bet this would make a good grilled cheese. With mustard. I think I have enough to give that a try this week upcoming.

I am pairing the aged gouda also with Great Earthquakes of the PNW which is all about toast, Juan de Fuca, and Japan's Orphan Tsunami plus also the importance of not discounting reports of native peoples.

Finally, the brown sheep sweater will be completed tonight. It is mere rows from the weaving in. Go me!

Festive cheese 3 was mimolette, which I rather liked. It was festive with crisp cider, pears and salami. I did not have any of those things so I ate it plain. It was good anyway but not suitable for grilled cheeses because too cow-y and also yellow.

Festive cheese 4 is a wensleydale with cranberries. It is festive with hefewisen (that is most certainly spelled incorrectly) and honey and prosciutto (spelled correctly). It's the first wax-enclosed cheese and while it is delightfully tasty, I don't think it needs to be sweeter than it is so even though I have honey... lolnope. I do not have wheat beer or prosciutto either, so plain again. I suck at pairings or else this cheese sampler is aimed at someone with a fancier kitchen than mine.

Festive cheese 4 is entirely unsuited to grilled cheeses. Nobody wants a grilled cheese with cranberries in it.

Festive Cheese Part 2 is an aged white cheddar from the UK. It is sharp and delightful but not a cheese that Lala will enjoy. She does not like aged bite-y cheese as much as she likes less-sharp milk flavored cheese. I like the aged white cheddar a lot but also it's not For Grilled Cheeses because cheddars don't melt real well anyway. This cheese was festive with things I didn't have so I ate it (a) plain and (b) melted on brazilian-style black beans. I bet it'd be real good with apples or apple-based desserts.

But if you weren't here two years ago, note that "Advent Cheese" was an advent calendar with like five kinds of cheese and not twenty-five. In that, it was a disappointment. I was hoping for twenty-five different kinds of cheese in an Advent Calendar Of Cheeses. While I dutifully ate the included cheeses, they were not at all what I was hoping for in an Advent Cheese calendar.

This year we are not doing Advent Cheese )
