Annoying. Tomatoes that are good-for-salsa are impossible to dice neatly. Tomatoes that can be sliced neatly and aesthetically are not suitable for anything you're going to eat.
I have been toying with the idea of growing tomatoes in the basement. This is less an issue right now than it will be later in the year. I am thinking of using really big pots and some wire to tie same to rafters. There will need to be some anti-cat devices installed in all likelihood. Grow lights and timers will likely be needed, too.
I am with you on the quality of tomatoes and their slicing. I also agree that a really sharp knife may be your friend here. I suggest that you look for a filet knife in the sporting goods section at WM or someplace. You should be able to get one for something like $10-$15. Starting the 'maters may be difficult with it since the filet knife will not have a serrated edge, but I'm guessing that the sharpness will overcome that limitation.
Failing that, you could try sharpening your regular knives. They probably need it anyway.
