I had pork and sauerkraut for lunch and dinner today. There were also potatoes at dinner, but not at lunch. Potatoes are a non-essential part of the meal. Anyway, while I need a little more practice selecting pieces of pork that will fit in my crock-pot without trimming, otherwise I'm down with my bad self on that front. Also, it irritates me that the Weis does not carry Silver Floss sauerkraut and only has their bagged store brand. The store brand is not as good as Silver Floss, but it's better than any of the canned shit so I buy it rather than make a trip to a second grocery that has the proper sauerkraut but more expensive pork. *sigh* You know, the price of pork would not be a problem for me if I could just convince the beef fairy that pigs are for eating. :)

You know, when I come across the words "beef fairy" in your LJ, I never am quite sure where the post is going. Fortunately, you did provide some context.

I note that you can purchase pork products at Valley Packing, probably the particular and necessary parts at reasonable cost and in decent quantity. The problem with pork is that, aside from the roasts, there is a lot of processing that needs to be done. Bacon needs sliced, sausage needs made, ham needs curing, etc. It's not as simple as with a steer:

1. Hit over head
2. Skin and gut
3. Hang for a bit
4. Cut meat
5. Grind up ugly bits that don't slice well and put into burger tubes
6. Cut up likely bones for soup/dog

VP may be able to give you a decent price on bone-in pork parts cut in manageable sizes, which could then be frozen adjacent to the beef fairy's stash. You buy pork once or twice a year and then you just need to hit the store for kraut.

The canned stuff is ghasty, btw. Fit only for hot dogs, and even then it's questionable.
