Jun. 25th, 2007 09:11 pmGrandma's out of surgery. She lived through it. The doctor said that her bones were softer than he'd have liked but not all that bad for ninety-four. They are planning to have her doing weight-bearing exercise tomorrow. Me, personally, I think they are optimists.
In other news, I made ratatouille for dinner.
I'm not french. I'm not a chef. I just make this thing with eggplants and squash and tomatoes ...
In a large pot, put some olive oil. Use maybe two or three tablespoons. Turn heat to medium.
Add 4 cloves garlic and 1/2 a large white onion, sliced thinly. Cook until onions are mostly done.
Add 1 eggplant, the big non-ethnic kind, peeled and cut into dice (the kind you roll boxcars with) sized pieces
Add 2 tomatoes. I used beefsteak. If you're using roma, I suggest three. Slice these thin.
Add two red bell peppers, sliced thin.
Add one medium or two small yellow crookneck squash, sliced.
Add one young-ish zuchinni, sliced.
Add 8 oz mushrooms, the button kind
Add a splash of white wine (if you have it) or a splash of water (if you've no wine). Sprinkle basil and oregano on top, about 3:1 for basil:oregano.
Add some salt and pepper.
Stir, using a folding motion.
Change temp to low, cover, cook until done, stirring things up every twenty minutes or so. Serve over rice. I put butter on mine but you don't have to.

I do believe you can't have too much basil
or wine in this
sliced round steak, and rotini noodles,topped with parmesan cheese makes it a real meal.
sadly, we can't grow anything worth eating where we live now (the soil is sand with no calcium in it, but every few weeks we get the veggies from my mother's garden, and I beg my sister for some of her home-grown pesto.
