Feb. 10th, 2008 12:13 amI spent most of today smoking bacon. That went well. I cooked up some of the bacon and ate it. It was a bit saltier than I would like but otherwise is spectacular. I think if I do this again, there will be about half as much salt in the cure. Everything else, though, wow. It was good.
