For dinner, I had a Licious Food Item.
Corn and kidney bean salad, easy.
You will need
1 large white onion
1 lime
about a cup of corn kernels, frozen is OK
1 can light red kidney beans
good handful cilantro
knob of butter
chipotle chili powder
salt
(Jalapenos and perfectly ripe tomatoes both would have been nice, but I didn't have them.)
Instructions: Chop up one half of the onion fairly coarsely, sautee with knob of butter until onion is browned and caramelized yummy goodness. You can kind of have it going while you assemble the rest of the stuff, so start that first. In colander, put beans and frozen corn. Run hot tap water over to (a) thaw corn and (b) wash slime off of kidney beans. If you do this all at once, it saves water. Cut up about a third of the OTHER HALF of the onion, in fine dice, and leave that raw. Add it to the corn and beans. Chop up the cilantro into pieces you want to eat. Put it in with the corn and beans and onions. Cut lime in half, squeeze both halves over salad. Add some salt. Add 1/4 teaspoon (or so -- I eyeballed it) of chipotle chili powder. Stir. Add warm carmelized onion pieces, stir well to make everything evenly distributed.
Eat. Yay!
